The key to finding keto-friendly dairy is to look at the carb and sugar content.  Regular cows milk is generally out as it’s fairly carb heavy, but heavy creams are a great and tasty substitute.  Experiment with new cheese findings!

Careful with snacking: One thing you have to keep in mind is that even while eating keto you can suffer from small insulin spikes. Less snacking means less of those giving you a better chance of losing weight.
If you’re looking to get a jump start on your health and fitness goals this year, you may be thinking about trying the ketogenic diet. Maybe you’ve heard the phrase before — it’s a huge diet buzzword — but aren’t sure what it means. Here’s a primer: The ketogenic diet is an eating plan that drives your body into ketosis, a state where the body uses fat as a primary fuel source (instead of carbohydrates), says Stacey Mattinson, RDN, who is based in Austin, Texas.
Within just a couple days of cutting out carbs and raising fats, ketone concentrations in the blood rise and the brain will begin using them for energy preferentially. This initial keto-adaptation process usually takes about four weeks to complete, at which point you’ll reach peak fat-burning adaptations.
Coconut Oil: Coconut oil is high in medium-chain fatty acids (MCFAs) like caprylic acid, lauric acid and capric acid that provide an excellent source of energy. Animal studies have also revealed that coconut oil can improve antioxidant levels and reduce stress on the liver. (11)
In 1921, Rollin Woodyatt reviewed the research on diet and diabetes. He reported that three water-soluble compounds, β-hydroxybutyrate, acetoacetate and acetone (known collectively as ketone bodies), were produced by the liver in otherwise healthy people when they were starved or if they consumed a very low-carbohydrate, high-fat diet. Russel Wilder, at the Mayo Clinic, built on this research and coined the term ketogenic diet to describe a diet that produced a high level of ketone bodies in the blood (ketonemia) through an excess of fat and lack of carbohydrate. Wilder hoped to obtain the benefits of fasting in a dietary therapy that could be maintained indefinitely. His trial on a few epilepsy patients in 1921 was the first use of the ketogenic diet as a treatment for epilepsy.[10]

A: Although desirable, there’s no requirement to eat organic or grass fed. Just get whatever cheap meat and veggies and eggs you can find. Frozen is usually cheaper and wait till something’s on sale and stock up. You don’t need to buy all the fancy things like nut flours, MCT oil, psyllium husk, xantham gum etc. Just keep meals simple and it can all be easy and cheap.
A: Some people want to go off keto once they’ve reached their goal weight, others choose to stay on keto or take up a clean-eating diet. I’ve been on keto for almost a decade now. One thing to always remember – if you go back to your old habits you will put the weight back on.
This form rotates ketogenic days with high carb days, usually five ketogenic days followed by two high carb days. Sometimes referred to as ketogenic carb cycling, this version of the keto diet can help maximize fat loss and build muscle.
You might be asking, “What’s a net carb?” It’s simple really! The net carbs are your total dietary carbohydrates, minus the total fiber. I recommend keeping total carbs below 35g and net carbs below 25g (ideally, below 20g).
Since carbs are your body’s first choice for energy, the only way to get your body to burn fat for fuel is by getting your body into ketosis. Without stored glucose, your body has no choice but to dip into your fat stores and begin converting those fatty acids to ketones when you need energy (9).
As a general rule of thumb, the sweeter the vegetable is – the more sugar it has in it. You have to be very careful with the amount you consume from things such as carrots, onions, and squash. You can easily see the difference in carb counts between the above and below ground vegetables above. Of course, you can eat these in moderation, but you need to watch your intake.
I’ve read a lot on the whole craze of going organic. If you only care about the nutrition, then you do not have to purchase organic vegetables. Though they are proven to be safer for the body (less residue of pesticides and toxins), they contain about the same nutrients as their non-organic counterpart. Don’t be afraid to stock up on vegetables – both frozen and fresh are great to eat!
Constipation is a key sign that you are not maintaining electrolyte/mineral balance during keto adaptation. The consistency of someone’s stool, and therefore the ability to pass that stool, is heavily influenced by its water content. The water content of your stool is likewise influenced by your overall hydration levels.
Pork on it’s own would never be fatty enough to be near ideal Keto macros, it’s also very clearly not a vegetable, something most of us don’t eat enough of. So to make vegetables less boring and boost the fat quota of the meal I’ve made up a sensational cheese sauce. If you’re just getting started on Keto, this is a great one to kick it off with.
Having high ketone levels (0.5-5.0mmol/L) is not dangerous. Ketosis is a perfectly safe and natural metabolic state, but it is often confused with a highly dangerous metabolic state called ketoacidosis.

Now, Week 1’s shopping list is going to be long. I have to make the assumption you have nothing in your house. Many of the items are common items that most people will have already. Keto is a diuretic. Everytime you urinate you’re losing electrolytes and water. To combat this you can make a nice drink from a bouillion cube (makes a great broth) or by using MiO with Electrolytes and increasing your water intake. The goal is to replace the electrolytes that you’re using.

Question: One of the world top experts in high fat low carb diet, Dr Tim Noakes has stated that top level athletes actually perform better on keto, as himself an extreme marathoner , cured his type 2 diabetes by going keto. In the light of what we know today about keto, would you still assert that athletes shouldn’t adopt ketosis as their desired state?

There’s no real scientific reasoning/explanation behind why some people start to itch when they start keto. There’s just a handful of experiences that people have written about, and so I’m basing my answer on what I’ve read.
A computer program such as KetoCalculator may be used to help generate recipes.[46] The meals often have four components: heavy whipping cream, a protein-rich food (typically meat), a fruit or vegetable and a fat such as butter, vegetable oil or mayonnaise. Only low-carbohydrate fruits and vegetables are allowed, which excludes bananas, potatoes, peas and corn. Suitable fruits are divided into two groups based on the amount of carbohydrate they contain, and vegetables are similarly divided into two groups. Foods within each of these four groups may be freely substituted to allow for variation without needing to recalculate portion sizes. For example, cooked broccoli, Brussels sprouts, cauliflower and green beans are all equivalent. Fresh, canned or frozen foods are equivalent, but raw and cooked vegetables differ, and processed foods are an additional complication. Parents are required to be precise when measuring food quantities on an electronic scale accurate to 1 g. The child must eat the whole meal and cannot have extra portions; any snacks must be incorporated into the meal plan. A small amount of MCT oil may be used to help with constipation or to increase ketosis.[36]
Combine water, apple cider vinegar, rice vinegar in quart mason jar. Shake until gochujang paste is mixed evenly. Pour into saucepan and bring to a boil. Boil for 3-4 minutes, remove from heat and cool. Combine peeled eggs, green onions, garlic and pickling spice in a jar. Pour cooled mixture over eggs and seal jar. Refrigerate at least 24-48 hours.
In the case you do run low on glucose, your body will switch gears and begin converting stored fatty acids to ketones, which can be used as a secondary energy source (8). This is why the ketogenic diet is so effective for weight loss. Instead of starving yourself, you’re training your body to burn fat for energy.
The cyclical ketogenic diet (CKD) involves alternating days of strict keto and high-carb consumption. For example, a week on CKD would involve eating 20-50 grams of carbs for five consecutive days, then eating a high-carb diet (over 100 grams per day) for two days.
A systematic review in 2016 found and analysed seven randomized controlled trials of ketogenic diet in children and young people with epilepsy.[2] The trials were done among children and young people for whom drugs failed to control their seizures, and only one of the trials compared a group assigned to ketogenic diet with a group not assigned to one.[16] The other trials compared types of diets or ways of introducing them to make them more tolerable.[2] Nearly 40% of the children and young people had half or fewer seizures with the diet compared with the group not assigned to the diet. Only about 10% were still on the diet after a few years.[2] Adverse effects such as hunger and loss of energy in that trial were common, with about 30% experiencing constipation.[16]
On a ketogenic diet, you’re generally eating a diet that’s high in fat (roughly 70 percent of your total calories come from fat), moderate in protein (about 20 percent of your calories), and low in carbohydrate (about 5 percent of calories). By limiting carbohydrates (to usually less than 45 grams for the average person), your body lacks the glucose (from carbs) that it normally uses for energy, so it eventually switches over to burning fat as its primary fuel source instead; through a metabolic process called ketosis, the liver converts the fat into fragments of fatty acids called ketones, which power the brain and other organs and tissues.
A study with an intent-to-treat prospective design was published in 1998 by a team from the Johns Hopkins Hospital[19] and followed-up by a report published in 2001.[20] As with most studies of the ketogenic diet, there was no control group (patients who did not receive the treatment). The study enrolled 150 children. After three months, 83% of them were still on the diet, 26% had experienced a good reduction in seizures, 31% had had an excellent reduction and 3% were seizure-free.[Note 7] At twelve months, 55% were still on the diet, 23% had a good response, 20% had an excellent response and 7% were seizure-free. Those who had discontinued the diet by this stage did so because it was ineffective, too restrictive or due to illness, and most of those who remained were benefiting from it. The percentage of those still on the diet at two, three and four years was 39%, 20% and 12% respectively. During this period the most common reason for discontinuing the diet was because the children had become seizure-free or significantly better. At four years, 16% of the original 150 children had a good reduction in seizure frequency, 14% had an excellent reduction and 13% were seizure-free, though these figures include many who were no longer on the diet. Those remaining on the diet after this duration were typically not seizure-free but had had an excellent response.[20][21]
Instead, research shows that low-fat diets high in refined sugar and carbs are far more destructive to the heart and arteries than fat, and have a greater ability to raise blood pressure and cause inflammation (12).
Holy smokes what a great article! Thank you for such a thorough read. I have been doing a “keto diet” (keeping carb’s under 40 g/day-I use a tracker) since the beginning of January and felt “fluish” at first like you state. That passed and this past week (It is now Feb 11)my weight loss has stalled so I am experimenting with even lower carb’s (15-20g/day). This change has really interrupted my sleep the past 3 nights, hence me typing this at 4:44 in the am after deciding to do some research the past hour. Will this too pass? Or is it time for a Mg supplement? And if so can I use a pill rather than a drink? Between all the water and the bone broth I am unsure how more I will want to drink ha! But if I have to then I will, just thought I would ask. Again, thank you for all you are doing and such a fantastic read!
There’s an underlying reason we don’t want to test ourselves. We might not get the answer we want. Pride and shame conspire to tell us we don’t need to check our results. The key is to not take yourself so seriously and just go for it. The two possible outcomes are
The most obvious sign that your electrolyte/mineral balance is being affected is an increase in urination. On a low-carb diet, insulin levels drop which promotes the secretion of sodium in the urine. Sodium pulls more water into the urinary system which then is excreted as well.
This initially doesn’t seem like a problem until you realize that the body can’t store that much glucose. This becomes an issue for you because the extra glucose gets converted into fat which is then stored.
Your body is used to the simple routine of breaking down carbohydrates and using them as energy. Over time the body has built up an arsenal of enzymes ready for this process and only has a few enzymes for dealing with fats – mostly to store them.
Many people deal with common side effects similar to flu-like symptoms as they become fat adapted after decades of running on carbs. These temporary symptoms are byproducts of dehydration and low carbohydrate levels while your body is still trying to use carbohydrates as its primary energy source, including:

Have you tried ghee? Most people who can’t do dairy CAN do ghee. But if you can’t do ghee, then coconut butter or raw cacao butter will work. Our brain is mostly fat. Our bodies work more efficiently when we are eating lots of healthy fats (and lower carb). I hope that helps.
Hydrating and Mineral Rich Foods:  Consume plenty of hydrating, mineral-rich foods and use salt generously. I like to snack on celery, cucumbers, and especially seaweed in the form of these Sea Snax. These are like seaweed chips that taste great and contains a lot of beneficial minerals.
Lots and lots of food with dessert to cover the bases! Dinner is a fantastic time for me. I suggest breaking your fast with a small snack, then after 30-45 minutes eat to your hearts content. Normally I need 2 meals to get to my macros, and I think you’ll need to do the same.
One thing to remember: “It’s easy to get ‘kicked out’ of ketosis,” says Mattinson. Meaning, if you eat something as small as a serving of blueberries, your body could revert to burning carbohydrates for fuel rather than fat.
Option 3: “Make your own keto ‘lunchable’ with cubes of grilled chicken, a slice of nitrate-free ham, cheese cubes, pickle slices, a hard-boiled egg, a few raw grape tomatoes, raw veggies like cauliflower or broccoli, a few almonds or walnuts, guacamole, and ranch dressing,” says Stefanski. I wanted to put it out there that I made this meal plan specifically with women in mind. I took an average of about 150 women and what their macros were. The end result was 1600 calories – broken down into 136g of fat, 74g of protein, and 20g net carbs a day. This is all built around a sedentary lifestyle, like most of us live. If you need to increase or decrease calories, you will need to do that on your own terms.
NOTE: The main exception to ketoacidosis is type 1 diabetics – it can happen when insulin levels are severely low which is rare in someone with a normally functioning pancreas. Dangerously high ketone levels result in insulin secretion.
Turning to butter and bacon to lose weight and boost health might not scream “winning plan” to everyone. But it makes perfect sense to those on the ketogenic diet (or “keto diet”), the latest “it” regimen that backs high-fat, moderate-protein, and low-carbohydrate eating.
I would love to try this recipe but as of September 2017 I’ve been dairy free, my new functional doctor did food allergy testing & said dairy needs to go for life. Can I just omit the grass fed butter & the drink still have the same benefits? Or can I substitute something in place if the butter?

The high fat aspect of this diet is what pulls it all together. Fat is what makes you full, gives you energy(when in ketosis), and tastes delicious. Weeks of eating a high fat diet has a way of naturally correcting eating patterns to better align with when your body is actually hungry. It’s easy to get caught up on the “low carb” part of this and not give enough attention the the “high fat” part.
